Boston Market hit the scene in 1985 as Boston Chicken. The restaurant made rotisserie chicken famous and, at its peak, had more than 1,000 locations across the United States. But business began to wane in the 1990s, and by 1998, the fast-casual chain filed for bankruptcy. Today, Boston Market has fewer than 20 locations nationwide, but that will change soon. The company plans to open a new store in Buffalo, New York, and hopefully, many more. According to Buffalo Business First, owner Jignesh “Jay” Pandya has plans for the beloved eatery.

“He’s licensing the concept to other owners who recognize the potential of the brand because the current business is not set up to accept franchisees,” according to the report.
Jay Has Global Plans For Boston Market
Restaurant Business reported Jay opened a location in Delhi in 2024 called Boston Chicken India. An Instagram post explained, “Where American tradition meets Indian hospitality. Step into Boston Chicken India’s inviting dining haven, where every moment is an immersive experience. Savor the fusion of slow-roasted perfection and vibrant flavors that elevate the simple pleasure of a meal. Discover a culinary oasis in the heart of Delhi.”
It’s not clear what Jay’s exact plans are, but Boston Market has a lively social media presence and often posts on Instagram.
On a post from May 12 a customer asked, “You guys still exist.? Every location near me has closed.”
Boston Market replied, “Which location close down near you that you’re missing?”
According to its website, Boston Market still has plenty to offer.
“Our mission is to create awesome rotisserie meals. We started our restaurant revolution with just three ingredients: fire, a spit, and chicken. No one does chicken like we do. But chicken isn’t the only thing that hits our rotisserie oven— we utilize the same tried and true techniques on our prime rib. Get hungry for rotisserie perfection.”
